Not Your Mamma’s Tuna Salad Sammy
Two cans of tuna
Handful of fresh, chopped parsley
One scallion, diced
2 celery stalks, chopped
2 T mustard (I use whole grain for texture)
2 T coconut oil (melted)
½ green apple, cubed (optional)
Turkey bacon, cooked (optional)
Avocado, sliced (optional)
Mix all of the ingredients in a large bowl. I love this on toasted Ezekiel bread with a slice of avocado and crunchy turkey bacon.
Why It’s Awesome:
By nixing the store-bought mayo, you are also nixing the sodium and bad-for-you fats.
