The Little Black Dress of Muffins

The Little Black Dress of Muffins
The Fixings:
2 teaspoons Baking Powder
2 cups Oat Flour
¼ cup rolled oats
1 teaspoon cinnamon
1 teaspoon pumpkin spice
2 teaspoons Truvia (or preferred sweetener)
¼ chopped Medjool Dates ~ approximately 3
1 cup Almond Milk
1/3 cup Organic Apple Sauce ~ 1 container

How To:
Preheat the oven to 375 degrees and grease a muffin tin (this recipe makes about 6-8 muffins).
While the oven is preheating, whisk together all of your dry ingredients.
Add the almond milk and apple sauce. Stir.
Sprinkle in the chopped dates.
Continue to stir until the mixture becomes batter-like.
Pour into greased muffin tin, filling the cup to just over three fourths of the way full.
Bake for 15-17 minutes until a toothpick inserted in the center comes out clean.
Allow to cool for 5 minutes before serving.

Why It’s Awesome:
Besides being dairy and refined sugar free, these sweet treats are totally versatile … hence “the little black dress” label. The sweetness tastes like you’re doing something bad, but the nutritional value and lack of bad-for-you ingredients make these treats a total win. It’s up to you how you want to accessorize them, I mean serve them. They have been smeared with a little butter and paired with a hearty stew. Some prefer theirs drizzled with honey and eaten as a dessert. I like to lather mine up with some toffee flavored nut butter in the morning while enjoying a cup of coffee.
